French Onion Soup is one of my favorite soups and I never thought that it would be so easy to make! I always thought this soup was something that was better to be ordered at a restaurant, but after knuckling down to find a good recipe for French Onion Soup, I’m sooooooo happy to have found one that tastes just as good as any one you’ll find in your five-star restaurant.
The recipe starts off with onions and butter; you know a recipe is going to be fabulous when onions and butter are the first two ingredients mentioned ?. The secret to a good french onion soup is the time taken to caramelize the onions, without doing this, your soup will lack flavor and be missing a certain je ne sais quoi. Make sure that you spend enough time to caramelize the onions until they are brown and have shrunk slightly.
Another tip is to use white wine as opposed to red wine in the soup. Red wine will give it a slightly fishy aroma which is NOT what we want in our soup… using a white wine such as sauvingon blanc is a great way to add an extra layer of flavor that is not too strong.
Lastly, using a GENEROUS amount of cheese to top the soup is always a must. If you are using processed cheese however, know that it might look a bit funny because it will melt differently…Â My favorite cheese to use on this soup are gouda, parmesan and white cheddar, but feel free to use whatever you have on hand! (just don’t use fat free cheese, that stuff is NASTY).
Following these tips will help ensure that you have a delicious and hearty french onion soup, one that will make people think you are a fancy chef ?

- 4-5 medium onions, chopped lengthwise
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- Black pepper to taste
- A tsp of sugar
- 1 bay leaf
- 900 ml carton of beef broth
- 1½ cups water
- ½ cup white wine
- 1 stale baguette
- Any cheese of your choice
- Heat the butter in a large soup pot until melted and add the onions, stirring frequently over medium heat until they are browned and caramelized. This will take about 20 minutes,
- Season with salt and pepper, then add the flour to the mix, stirring vigorously until the flour is incorporated evenly in the onion mixture.
- Add the sugar, beef broth, water and bay leaf, then simmer for 10 minutes. Next, add the white wine and simmer gently for another 10 minutes so the alcohol and evaporate.
- Preheat an oven or toaster oven to broil, then fill oven safe bowls with soup, about ¾ full. Place a

- Broil for 3-5 minutes until the cheese is brown and bubbly, then remove from the oven and serve hot!
