Now that it is summer, I love to make this tasty, healthy and easy Tex Mex Bean and Corn Salad ☀ The hearty beans and avocado, the sweet corn, the fresh veggies and the aromatic cilantro make for a salad that needs little to dress it up! Just some salt, pepper, oil and lemon juice will do the trick and make all these flavours POP.
The salad is good when it is freshly made, but if you are making ahead of time, the flavours will have more time to mingle with each other. That also makes this a great make-ahead lunch!
So I hope you will find some inspiration in this post and make your very own Tex Mex Bean and Corn Salad, it really is delicious!

- One 19 oz can of beans, drained and rinsed
- One cup of corn kernels, cooked
- Tomatos, chopped
- Avocados, chopped
- Cilantro, roughly or finely chopped
- Salt and pepper to taste
- Juice of ½-1 lemon or lime
- 1-2 tbsp canola or olive oil
- Toss everything in a bowl, mix it together and serve it up! It is that simple 🙂
