Some bakers think using cake mix is blasphemous, but I think that using cake mix is great for saving time and the mix also provides a great base for you to experiment with different flavor and ingredient combinations.
For all you chocolate lovers out there, this one’s for you! Today, I will be sharing a quick and absolutely scrumptious recipe for fast and chocolate-y Fudge Brownie Cookies using a box of chocolate cake mix! The recipe is customizable and they are a favorite with loads of people because come on, who doesn’t like chocolate??? These are like chocolate chip cookies, but even more chocolate-y π How perfect for all those chocoholics! (including me) ?
This is a no-fail recipe, all you need is a box of cake mix, 2 eggs, butter, coffee powder and your choice of mix-ins. I love using mint chocolate chips and extra coffee powder to create a fudgy peppermint mocha cookie, or using white chocolate chips and making a dark and light double chocolate cookie π Oooh, another fab idea is throwing in some broken apart graham crackers and a handful of mini marshmallows to make a smores style cookie.

- One 15.25 g box of chocolate cake mix
- 2 eggs
- ½ cup melted butter
- 1 tsp instant coffee powder
- A handful (or two) of chocolate chips
- Preheat an oven to 350 F
- Dump the cake mix, eggs, melted butter and instant coffee powder into a big bowl and mix until combined, then add in the desired mix ins. (You can leave them plain, too!)
- At this point, you can cover the dough and let it firm up in the fridge for an hour or so, or you can go ahead and scoop it out onto a baking sheet lined with parchment paper. (About 1 tbsp per cookie)
- Bake for 10-12 minutes, or until the cookie is set around the edges and not "sticky" looking.
- Let them cool on the baking sheet for about 15 minutes, then transfer them to a wire rack to complete the cooling, or DEVOUR THEM WHILE THEY'RE WARM

Yum – these look wonderful! I love all things chocolate! I’ve made something similar…before baking I rolled them into powder sugar. I loved them! Bet the coffee in your recipe gives these cookies a little extra something. I’ll make these the next time I want cookies and quick π
