It seems that minions have taken over the world! Everywhere I go nowadays, I either see a minion or I hear someone talk about them… the fact that the Minion movie is out now also adds to their popularity. Anyways, I have decided to jump on the minion bandwagon by making these super cute and easy Minion cupcakes 🙂 I mean, they are kind of cute, aren’t they?
It’s all super easy, you first start off by making a basic chocolate cupcake and I recommend using my perfect chocolate cupcake recipe. Next, I take some canned white frosting, add some yellow food dye and heat it in the microwave for a few seconds to get a softer consistency. This allows for the icing to spread across the surface of the cupcake more easily; I spoon the frosting on the cupcake and tilt it around to spread.
I don’t recommend dipping the cupcake in the frosting to coat it because I find that dipping the cupcake leads to the cupcake falling apart because the frosting lifts pieces of crumbs of the cake!
After the yellow frosting base is on the cupcake, I use some white frosting to draw eyes on the cupcake with a small spoon, then I melt some chocolate and use a toothpick to create the mouths and the glasses! A tip is to make sure the toothpick is cleaned off with a paper towel every time you have to re-dip it into the chocolate or frosting. This allows for less mixing between the frosting and chocolate.
And that’s all to it! It’s really up to you on how you want to decorate your minion cupcakes because they will turn out adorable either way. Now tell me, who is your favorite minion and why? 🙂 I would love to know.
